| 1 kg pork, cut into cubes | 2-3 bay leaves |
| 1 cup soy sauce | 1 tsp pepper |
| ¼ cup vinegar | 1 tbsp brown sugar |
| 1 cup water | salt to taste | 1 head of garlic (crushed) |
Marinate the pork: In a bowl, combine pork, soy sauce, crushed garlic, and pepper. Mix well and marinate for at least 30 minutes (or overnight in the fridge for best flavor).
Sauté: In a pot, heat oil. Add the marinated pork (save the marinade) and sauté until lightly browned.
Add Aromatics: Add the garlic from the marinade, onions, and bay leaves. Sauté for 2-3 minutes until fragrant.
Simmer: Pour in the marinade, vinegar, and water. Do not stir after adding vinegar. Let it boil first to cook off the acidity.
Cook: Once it starts boiling, lower the heat. Cover and simmer for 40 minutes to an hour, or until pork is tender. Stir occasionally.
Season: Add sugar, and adjust salt or soy sauce to taste. Simmer uncovered for another 5-10 minutes to reduce the sauce.
